You don’t even need to spend a lot of time in the kitchen making it, and as a bonus, it is all done in one pot. And if you didn’t already know that, lentils are an excellent source of vitamin B, iron, zinc, and magnesium. They are also an excellent source of fiber, just perfect for those of us who need to improve our gut health!

INGREDIENTS
- 500g lentils (I used red lentils);
- 2 onions cut julienne;
- 4 tomatoes cut in squares;
- 5 garlic cloves, minced;
- salt and pepper;
- 1 teaspoon of turmeric;
- 1 teaspoon of ground coriander;
- 1 teaspoon of cumin;
- 5 tablespoons of oil;
- sweet paprika and olive oil for serving;
- 2l of water;
INSTRUCTIONS
- In a big pot put the oil along with the onions and cook on low heat until they become softer and get a slightly brownish color;
- Add the minced garlic, cook for a minute or 2 then add the turmeric, ground coriander, and cumin.
- Stir well then add the tomatoes and cook for about 5-7 minutes max on low-medium heat;
- Rinse the lentils a few times under cold water then pour them all in the pot along with 2l of water;
- Season with salt and pepper now but you can add more salt or pepper later in the cooking process if needed;
- After about 20 minutes of boiling and string occasionally, taste the soup – the lentils should be very soft. It’s also a good time to season it again if needed. If the consistency is too thick for you, you can add more water, but make sure it’s hot;
- After the lentils are cooked, turn off your stove and let your soup rest for 5-10 minutes;
- Blend the soup carefully, then serve it in a bowl with some olive oil on top and sweet paprika;
- Optional: Toast some bread, cut it into squares and serve it with your soup;
