A cookies recipe will come soon here but until then what can be more amazing that having a cheesecake in a muffin form that you can easily transport and eat? Nothing right?
I hope I am not the only one but every year when Christmas time starts I feel like sweets are a big part of the equation. Not only because Santa likes them, but also because I like to treat everyone that is coming to my house with a little something sweet to keep them happy.

INGREDIENTS:
For the filling:
- 300g of cream cheese;
- 1/2 cup of heavy whipping cream;
- 1/2 cup of caster sugar;
- 1 teaspoon of vanilla extract;
- Optional: chocolate chips, cranberries or other things you want to put in the filling
For the base:
- 16 plain biscuits;
- 1 stick of butter;
Dishes:
- 2 bowls;
- 1 muffins tray or a cake form with a detachable bottom;
- Muffins paper forms if you go for the muffins;
- A baking sheet if you go for the cake form;
- 1 mixer;
- 1 wood tablespoon;
INSTRUCTIONS:
- First you have to make the base so grab a food processor and toss in the biscuits and the melted butter then crush them well;
- Grab the muffins form (or a simple cake form with a detachable bottom) and spread the biscuits equally. Then, take a glass and with it’s bottom press firmly against the biscuits so they would form a nice base;
- Grab a bowl, mix the heavy whipping cream for a few minutes until it gets firm then set aside;
- In another bowl, put the cream cheese and mix until nice and smooth then add the caster sugar and the vanilla essence and mix until well combined;
- Pour the heavy whipping cream that you just made from the bowl 1 into the bowl 2 and combine them together with a wooden spoon;
- If you want, now you can add the things that you can find as “optional” in the ingredients list;
- Pour the mixture into the forms and refrigerate for 12 to 24 hours;
- Optional: I’ve decided to put some razed chocolate on top to add a little extra;

There is lactose free cheese cream and heavy cream on the market so maybe you can switch those 2🤗
