Cookies for Santa | Blogmas day 23

Lets be honest, we all know that Santa likes cookies so why not treat him with some really good ones when he travels from house to house to bring the children their desired gifts. So do you want to make him happy this year? Just try this recipe and I am sure he will leave an extra gift for your under the Christmas tree.

For the cookies:

  • 3/4 cup of flour;
  • 1/2 teaspoon of baking powder;
  • 1/4 cup of unsalted, softened butter;
  • 1/4 cup of sugar;
  • 1 egg yolk;
  • 1/2 teaspoon of vanilla essence;
  • a pinch of salt;

For the royal icing:

  • 1 cup of powdered sugar;
  • 3 teaspoons of milk;
  • 1 egg white;

For the decorations:

  • 1 tube of green/brown/black icing for the branches;
  • mini M&M

Making the cookies:

  1. In a bowl, mix together the butter and the sugar and the soften butter. Once they are all combined, add the egg yolk, the pinch of salt and the vanilla essence and mix again until they are combined;
  2. Once well incorporated, add the baking powder and mix well;
  3. Now it’s time to add the flower. I like to add it with a big spoon so I can incorporate it better into the mixture. Add it spoon by spoon until it forms a dough. Sprinkle some flour on top of it and also on your hands then take out the dough and form a ball. Take a plate, sprinkle some flour on top, put the dough in and cover it with a food foil. Put it in the fridge for 10 minutes. I left mine in the fridge until I washed everything that I used to make it;
  4. Preheat the oven at 180 degrees Celsius;
  5. Take the dough out of the fridge, sprinkle some flour on a clean table then roll it (with a rolling pin) into a about 1.5cm thick round disk;
  6. Cut the shapes that you want then put them on a baking sheet lined with parchment paper. Place them in the oven for 10-15 minutes max. Check on them after the 10 minutes pass over so you make sure they won’t get too brownish and hard;
  7. Get them out after they are done and let them cool down;

Making the royal icing:

  1. In a bowl, combine the powdered sugar and the milk until all combined;
  2. Beat the egg white in another bowl then put about 3 tablespoons of the mixture on top of the combined powdered sugar and milk;
  3. Wish together very well until the powdered sugar is melted;
  4. Add a small quantity over each cookie and let it cool and harden almost completely before making the branches and adding the M&Ms;
